I love trying different toppings on toast. It’s not just butter and jam on toast now.. there are so many other things you can put. Here are two different ways from Bon Appetit to make toast more interesting and tasty. The first is savory toast with Greek yogurt, radishes & scallions. I like the freshness and crunch from the radishes & scallions. The second is scandi toast with butter, smoked salmon and cucumbers. Smoked salmon is so good and tastes good on anything. Why is smoked salmon so good? I get excited every time I see something with smoked salmon on the menu. One of my favorite breakfast meals is a bagel & lox platter.. you just can’t go wrong with it. I decided to create my own version and pile all the ingredients on to make a delicious open faced sandwich with smoked salmon & scrambled eggs. Grab a fork & knife (it might get messy if you pick up) and enjoy! I ate everything & left nothing, not even one caper 🙂 A Delish Thoughts recipe: Ingredients: smoked salmon bagel of your choice (I used onion) cream cheese sliced tomatoes sliced red onion sliced cucumber 2 eggs 1 tablespoon of milk 1/2 teaspoon of chives capers Directions: 1. Slice bagel in half and toast. 2. In a bowl, mix eggs, milk, chives, salt & pepper. Add a slice of butter to a pan and pour the eggs in to scramble. my friend & I have made it a Christmas tradition now to go to Canters for brunch every year. smoked salmon plate with bagels, potato pancakes with sour cream & applesauce, mimosas & pickles.. the perfect combination for a delicious holiday meal. Merry Christmas everyone! 🙂
need to whip up some quick & easy appetizers? try these receipes I made for my roommate’s birthday. smoked salmon on sliced cucumbers or toast: take smoked salmon pieces and arrange on sliced cucumbers or mini toasts. top it with a mixture of creme fraiche, prepared horseradish, to taste, the juice & zest of 1 lemon & chopped fresh dill. sprinkle with a sprig of dill. caprese skewers: easy peasy. just put cherry tomatoes, fresh mozzarella balls & basil onto skewers. drizzle extra virgin olive oil, balsamic vinegar on top and a sprinkle of salt & freshly ground pepper. endive leaves with goat cheese: add a spoonful of this goat cheese mixture onto each endive leave– softened goat cheese, 2 teaspoons of extra virgin olive oil, chopped fresh dill & 2 tablespoons of heavy cream. finish with a dash of freshly ground pepper ontop of each leaf!
