raw tuscan kale salad

Oh kale, why are you so good? It’s good in pastas, soups, braised, sautéed, baked & raw! I always like to find new kale recipes and am glad I found this recipe for raw Tuscan kale salad… it’s super easy to throw together and also so yummy. I could probably eat like 5 bowls of this. It’s cheesy, tangy, crunchy & has a bit of a kick from the red pepper flakes. I tried with grated parmesan cheese too and it was good so either cheese works. what’s for lunch: lentil salad

I have been trying to be healthy & save money by bringing lunch to work. Sometimes you need a good ol burrito/burger or you get lazy and don’t want to prepare food but I got inspired recently after I weighed myself and looked at my bank account.. both weren’t so pretty. So for this week, I made a lentil salad. I never cooked with lentils before but tried the already cooked lentils from Trader Joes and thought it was good. This recipe was inspired by my friend Lauren. I went over to her place for dinner and she made a delicious lentil salad and I kept refilling my plate with it. It’s pretty simple: just cook your lentils, add in dressing (olive oil, red wine vinegar, Dijon mustard), salt, pepper, lemon juice, red onions, parsley & arugula. summer salads

My friend and I were bored and she had an idea to make summer salads. These are two great summer salad recipes we found to make that are good for any occasion.. lunch, dinner party or potluck. The first is a lemon basil shrimp salad that takes a bit longer to prepare and you have to wait to marinate. We didn’t make the parmesan baskets and we also didn’t wait to marinate or chill as the recipe stated.. basically, we are terrible at following directions but nevertheless, it turned out yummy! (we were hungry & eager to eat!) The second recipe is for a tomato, peach & burrata salad. This is so easy to make.. just chop up your tomatoes, peaches, heat up balsamic vinegar, drizzle that and some burrata & basil and it’s ready! Two important things: make sure your peaches are ripe and juicy and although the recipe says you can substitute burrata for mozzarella, I recommend sticking with burrata. It’s creamier and I think it is better for this salad. * Lemon …
