If you’re in the mood for some creamy pasta, this recipe is a good one. It’s Giada’s rigatoni with creamy mushroom sauce. It’s super easy to make. The mascarpone cheese makes it creamy & rich and I added more parmesan cheese to make it even cheesier. I want to make it again but next time, will add some grilled chicken. It was so good, I couldn’t stop eating it and ate 3 servings. Oops, oh well. new recipe: Curtis Stone’s spaghetti with kale

Being sick at home is not fun.. but a girl still has to eat right? I was browsing through Instagram and saw Curtis Stone’s recipe (from his new cookbook “What’s For Dinner? Delicious Recipes for a Busy Life”) for spaghetti with kale. It is such a simple recipe and once again, I had all the ingredients already so I gave it a try. I know I said I needed more ingredients with my pasta in my last post but sorry Martha Stewart, Curtis Stone changed my mind.. It didn’t need anything else. I decided that it will be my new goal to try a new recipe at least once a week. So far, I’ve been doing a good job. I’m so dedicated that I even cooked when I was sick (good thing I was just cooking for myself). Since I didn’t feel like cooking anything too hard or fancy, I found the perfect recipe that included ingredients I already had at home. I will give you mad props if you know where that line is from. Anyone? I get random cravings and ideas all the time. Yesterday, I was driving home and suddenly decided to make pesto for the first time. I think most people, like myself, assume pesto is made with basil but you can make it with other greens as well– for this recipe (thanks to Giada), arugula was used to make the pesto. I wasn’t sure if it was good when I first tried it so for my own personal taste, I added half more of a garlic glove and 1/2 cup more parmesan cheese and then.. wah lah! Fresh pesto ready to go! Barefoot Contessa’s lobster mac n cheese

Lobster mac n cheese. Do I really need to say more? What can you not love about lobster mixed in cheesy, creamy pasta? It is obviously not the healthiest dish but we’re allowed to indulge in comfort food πŸ™‚ This recipe courtesy of Barefoot Contessa is really easy. I chose it because it didn’t require too many different ingredients and hello, it has lobster. Just remember to prep ahead & grate the cheeses before you start cooking. I was trying to hurry and grate the cheese in the middle of cooking and it would’ve been much easier to have had it ready to go. Instead of putting in individual dishes, I cooked the pasta in a large pan and baked in the oven for about 5 min longer to have a little more of a crisp on top. simple meat sauce

if you don’t have time to make a fancy pasta dish at home, just whip up some meat sauce in less than 10 minutes. all you need to do is sautee chopped onions, minced garlic, chopped mushrooms, ground beef.. stir in marinara sauce & add salt, pepper & red chili pepper flakes for a little spice and you’ll have simmering meat sauce ready to top over any noodles.

easy holiday potluck dishes: spaghetti with creamy butternut leek parmesan sauce

I wasn’t sure about this dish at first since I never had butternut with pasta but it turned out pretty good and it’s easy to make. boil water in 2 pots– one for the butternut squash & one for the pasta. once the butternut is soft, blend it until it is smooth. meanwhile, sautee chopped leeks & minced garlic in butter, add the creamy butternut, sliced sage leaves & parmesan cheese. mix in the pasta and sprinkle extra cheese on top if desired. a hearty, creamy dish! recipe courtesy of: http://www.skinnytaste.com/2012/10/spaghetti-with-creamy-butternut-leek.html
