linguine with clams

I used to not like clams, only in clam chowder. Yeah weird, makes no sense. But now, I like ordering pasta with clams and decided to try making it at home. I was inspired by the below recipe but did a few things differently. First of all, make sure you clean the clams thoroughly.. you don’t want dirty shells in your pasta! Instead of thinly sliced garlic, I minced garlic and I didn’t use tomatoes. I wanted to make it simple and just used garlic, red pepper flakes, wine, and parsley. I added a squeeze of lemon juice for a fresh taste. I was pretty impressed for my first time cooking with clams. simple pasta: garlic spaghetti with herbs

Sometimes the simplest recipes make the best meals. I did my classic google search by typing in ingredients I had at home and found this simple but amazing recipe. You just chop up garlic, basil & spinach and sautee with butter. Add in spaghetti & top off with cheese. It can’t get any simpler than that. Whenever I have tomatoes & herbs in the fridge, I like to just throw them in with some noodles. A bowl of pasta is always such a comforting meal and this is one easy & delicious recipe that you can just whip up in no time. It’s my go to dish when I want pasta & don’t want to cook for a long time. All you need are tomatoes, garlic, herbs and you’ll end up with a fresh tasting dish. The tomatoes get juicy as they simmer in garlic. My favorite kind of pasta is capellini but I ran out so I used linguine instead this time and it’s just as good. homemade pesto

There’s nothing like fresh, homemade pesto that is ready to eat. Β You could include it in sandwiches, drizzle it on fish, dip veggies in it, and of course, mix it with pasta! Β This is a great pesto recipe and you can add more of anything you like, depending on your taste buds. Β  I like to add a little bit more cheese. If you like artichokes, then this is a good recipe for you to try since it’s basically just pasta and artichokes, which is fine with me! It’s a super easy recipe with barely any cooking. You just fry up some rosemary, add garlic & artichokes from a jar and then add pasta and finish with cheese. Who would’ve thought mashed butternut squash would make a delicious & hearty pasta sauce?? If you’re looking for a new & different sauce than your ordinary marinara, then try this recipe.. it is SO GOOD! The butternut sauce is very easy to make– you just boil the squash until it gets soft and blend until smooth. I am such a nerd, I have been so excited to just say braise it up. I always like to have a bag of kale in my fridge since you can throw it into pasta, soups or make chips. Spaghetti with braised kale is one of my go to quick & easy meals with minimal ingredients. It’s basically just spaghetti, kale, garlic, lemon juice/zest, hot red pepper flakes all mixed together. I know it might sound like a boring dish but you’ll be surprised how much flavor there is. In order to braise kale, you have to cook it with some olive oil & garlic until it gets tender. I like to add a sprinkle of lemon zest & juice and then you toss in spaghetti. I didn’t have onions when I made this but you can also include onion or shallots. Why are sun dried tomatoes so good? I recently have been buying the packaged ones at Trader Joes and throwing them in any dishes I can. I love all kinds of pasta- creamy, red sauce, white sauce, spicy, you name it. But sometimes, a simple pasta dish does the trick. Back in August, I posted a simple pasta recipe for capellini with tomatoes & basil. This is basically the same recipe but you just substitute sun dried tomatoes for cherry tomatoes. It’s light, fresh & the tomatoes add a bit of sweetness to the dish. Yeah sorry I wasn’t too creative on this post but had to share my new found love for sun dried tomatoes. They’re also good in omelettes/scrambles, salads, and sandwiches. shrimp scampi for a homemade birthday dinner

My dear friend Jeni was coming over to my place before we went out to celebrate her birthday and I wanted to make dinner for her. I needed a simple dish to make since I had a limited time to cook and eat before heading out to a concert. That’s where shrimp scampi comes in! It’s a pretty quick dish to whip up. I copied the ingredients from this recipe from The Neeleys but didn’t really follow the directions. I bought cooked shrimp so my first step was cooking the garlic, red pepper flakes & olive oil. Then I added wine, lemon juice, zest & butter and let the shrimp simmer in the sauce for a couple minutes. Finally, add the pasta, a little bit of pasta water, toss and add parsley. simple pasta: capellini with tomatoes & basil

I was craving pasta and looked inside my fridge to see what I had and decided to throw it all in a pan.. and that is how I made this very simple and yummy pasta dish: capellini with tomatoes and basil. It was a great way to get rid of extra ingredients and even though there weren’t a lot of ingredients, it ended up being very flavorful. It’s one of those dishes that you can make based on what you like. You can revise and add anything more.. if you want it more garlicy, chop up some more garlic or if you like spiciness, add more red pepper flakes. You can also add other veggies you might have (ie: bell peppers, onions, spinach) but I like the simplicity of the dish.
