blueberry dutch pancakes

I haven’t had pancakes in such a long time and thought it would be fun to try making a Dutch pancake. If you’re wondering what a Dutch pancake is.. according to Wikipedia, it is “usually larger and much thinner than their American or Scotch pancake counterparts.” I liked making this because you don’t have to worry about flipping it and making sure it’s the perfect circle. You just mix the ingredients, pour into pan and then pop it in the oven! Crisp on the outside, soft in the inside! I wished mine curled more around the edges as I have seen in photos but I’ll try again next time and add some different ingredients. Cake in bloom

Check out these photos of my friend/co-worker Gretchen’s beautiful cake!! She baked this cake for a baby shower and it was a big hit. I decided that it will be my new goal to try a new recipe at least once a week. So far, I’ve been doing a good job. I’m so dedicated that I even cooked when I was sick (good thing I was just cooking for myself). Since I didn’t feel like cooking anything too hard or fancy, I found the perfect recipe that included ingredients I already had at home. Martha Stewart’s salmon with mango salsa

I am not ususally a fan of fruit in my meals. It just doesn’t sound good to me but for some strange reason today, I thought about salmon and mango together and decided to give it a try. With the power of Google, I found Martha Stewart’s recipe for salmon with mango salsa and I must say, it was quite delicious! I just baked salmon as I usually do in the oven (simple seasoning of olive oil, salt & pepper) and then topped it with the salsa. It adds alot of flavor- a little bit of sweetness from the mango and a bit of a kick from the jalapeno.
