raw tuscan kale salad

Oh kale, why are you so good? It’s good in pastas, soups, braised, sautΓ©ed, baked & raw! I always like to find new kale recipes and am glad I found this recipe for raw Tuscan kale salad… it’s super easy to throw together and also so yummy. I could probably eat like 5 bowls of this. It’s cheesy, tangy, crunchy & has a bit of a kick from the red pepper flakes. I tried with grated parmesan cheese too and it was good so either cheese works. braise it up! spaghetti with braised kale

I am such a nerd, I have been so excited to just say braise it up. I always like to have a bag of kale in my fridge since you can throw it into pasta, soups or make chips. Spaghetti with braised kale is one of my go to quick & easy meals with minimal ingredients. It’s basically just spaghetti, kale, garlic, lemon juice/zest, hot red pepper flakes all mixed together. I know it might sound like a boring dish but you’ll be surprised how much flavor there is. In order to braise kale, you have to cook it with some olive oil & garlic until it gets tender. I like to add a sprinkle of lemon zest & juice and then you toss in spaghetti. I didn’t have onions when I made this but you can also include onion or shallots. new recipe: Curtis Stone’s spaghetti with kale

Being sick at home is not fun.. but a girl still has to eat right? I was browsing through Instagram and saw Curtis Stone’s recipe (from his new cookbook “What’s For Dinner? Delicious Recipes for a Busy Life”) for spaghetti with kale. It is such a simple recipe and once again, I had all the ingredients already so I gave it a try. I know I said I needed more ingredients with my pasta in my last post but sorry Martha Stewart, Curtis Stone changed my mind.. It didn’t need anything else. The dish is light & hearty with the cooked kale.. all the flavors blend well together. My suggestion: add a sprinkle of hot red pepper flakes to give it a kick.
