simple pasta: spaghetti with sun dried tomatoes

Why are sun dried tomatoes so good? I recently have been buying the packaged ones at Trader Joes and throwing them in any dishes I can. I love all kinds of pasta- creamy, red sauce, white sauce, spicy, you name it. But sometimes, a simple pasta dish does the trick. Back in August, I posted a simple pasta recipe for capellini with tomatoes & basil. This is basically the same recipe but you just substitute sun dried tomatoes for cherry tomatoes. It’s light, fresh & the tomatoes add a bit of sweetness to the dish. Yeah sorry I wasn’t too creative on this post but had to share my new found love for sun dried tomatoes. They’re also good in omelettes/scrambles, salads, and sandwiches. The title sounds easy enough right? I’m talking about easy steps for making chicken milanese aka breaded chicken that is fried or baked or both! It can get messy but it’s a simple 3-step process to bread chicken: first you lightly cover the chicken with flour; then you dip it in egg; lastly, you coat it with bread crumbs. Once you finish breading and frying the chicken, you can get creative with your toppings. Take for example this delightful recipe from A Cozy Kitchen for Chicken Milanesa, Uruguayan Style. The breading has more of a kick and after the chicken is fried, it is topped with a slice of ham, shredded mozzarella & a fried egg. Can you say YUM! For the other half of my chicken breasts, I decided to add marinara & cheese aka chicken parmesan. Same breading process but after frying the chicken, I topped the chicken with grated parmesan cheese, marinara sauce & a slice of provolone. You can add as much cheese & marinara as you want. simple pasta: capellini with tomatoes & basil

I was craving pasta and looked inside my fridge to see what I had and decided to throw it all in a pan.. and that is how I made this very simple and yummy pasta dish: capellini with tomatoes and basil. It was a great way to get rid of extra ingredients and even though there weren’t a lot of ingredients, it ended up being very flavorful. It’s one of those dishes that you can make based on what you like. You can revise and add anything more.. if you want it more garlicy, chop up some more garlic or if you like spiciness, add more red pepper flakes. You can also add other veggies you might have (ie: bell peppers, onions, spinach) but I like the simplicity of the dish. Gwyneth Paltrow’s “best eggplant parmesan”

Gwyneth Paltrow has been in the news recently because other authors were upset that she attended a book signing event in the Hamptons and claimed she hijacked the event. She has also been accused of having ghostwriters for her cookbook. Well I’m here to say- leave her alone! I’ve always liked her and don’t understand why people hate her so much. Just stop hating and start eating! In light of the Gwyneth news, I was inspired to try some of her recipes to see if they are any good. The first recipe I chose was her “Best Eggplant Parmesan” and let me tell you.. it was delicious! It is a very simple recipe and the eggplant and cheese just melts in your mouth.
