easy recipe: pasta with tomatoes & basil

Whenever I have tomatoes & herbs in the fridge, I like to just throw them in with some noodles. A bowl of pasta is always such a comforting meal and this is one easy & delicious recipe that you can just whip up in no time. It’s my go to dish when I want pasta & don’t want to cook for a long time. All you need are tomatoes, garlic, herbs and you’ll end up with a fresh tasting dish. The tomatoes get juicy as they simmer in garlic. My favorite kind of pasta is capellini but I ran out so I used linguine instead this time and it’s just as good. Barefoot Contessa’s fennel & garlic shrimp

I recently received “Barefoot Contessa Foolproof” as a gift and have been waiting to try a new recipe. I love going through cook books, staring at the delicious looking food, and book marking recipes. Foolproof dishes are deeply satisfying, recipes that you can trust and as Ina Garten wrote: “when a recipe becomes truly foolproof, you feel that you can almost make it with your eyes closed.” That is how I feel about Ina’s recipes– they are always reliable and you want to make dishes over again. I chose this recipe for fennel & garlic shrimp because I needed a fairly simple dish to make at a friend’s house. It’s super easy and oh so delicious. I did not end up using Pernod or fleur del sel and the truth is, I didn’t feel like buying them. Pernod is an optional ingredient anyways and I just used kosher salt. It’s a dish perfect for sharing. I recommend eating with toasted baguette to dip in the sauce or with basmati rice. My only warning is that …

Barefoot Contessa’s lobster mac n cheese

Lobster mac n cheese. Do I really need to say more? What can you not love about lobster mixed in cheesy, creamy pasta? It is obviously not the healthiest dish but we’re allowed to indulge in comfort food 🙂 This recipe courtesy of Barefoot Contessa is really easy. I chose it because it didn’t require too many different ingredients and hello, it has lobster. Just remember to prep ahead & grate the cheeses before you start cooking. I was trying to hurry and grate the cheese in the middle of cooking and it would’ve been much easier to have had it ready to go. Instead of putting in individual dishes, I cooked the pasta in a large pan and baked in the oven for about 5 min longer to have a little more of a crisp on top.
