today’s breakfast: asparagus with fried egg

This is one of my favorite dishes to make because: 1) it’s easy, 2) it’s quick, 3) just look at it!Β  I really don’t know what else to say.Β  The directions are so simple and you end up with a fancy looking dish. today’s breakfast: sweet potato hash

This was the first time I ever cooked with sweet potato or had it in a hash! I felt like mixing it up since I always use regular potatoes and found this recipe for sweet potato hash. There were a few revisions since I didn’t have some of the ingredients at home: I used yellow bell pepper, yellow onion & no green onions. And you can’t eat hash without some eggs! I of course had to add some fried eggs on top to complete the dish.   One of my favorite entrees to order for breakfast is croque madame. What’s not to love about it? It’s an ooey gooey plate of deliciousness that includes ham, cheese & egg. A Cozy Kitchen has become one of my go-to sites now for great recipes. I have a long list of recipes waiting to be attempted.. the recipes are easy to follow & everything I have made so far has been satisfying. Including this recipe for croque madame! First, you make the yummy cheesy sauce, then spread it on sliced bread. Add mustard, ham, more sauce & cheese and then you cook the sandwiches in a pan. Finally, you add more sauce on top, stick in the oven and add a fried egg on top! It’s soooo good. It ain’t a healthy dish but it definitely is good. homemade huevos rancheros

Huevo Rancheros is one of my favorite dishes to order for breakfast but sometimes it is so heavy & greasy at restaurants. I wanted to try making it at home so it would be lighter & fresh. This was fun to prepare and assemble everything. And seriously, a fried egg just makes everything better. It would also be yummy to include ground beef or chorizo but I liked the freshness with just the avocado & tomatoes. baked eggs in avocado

I found a new item to cook eggs in… instead of a ramekin, an avocado! I’ve been intrigued seeing photos of baked eggs in avocados and decided to try it myself. All you do is cut an avocado in half, scoop out a little more avocado from the hole if needed to make more room for the egg. Then you crack an egg into the hole, sprinkle salt & pepper and bake in the oven. Keep an eye on it so you can determine when it’s done. I added green onions & tomatoes on top but it would also be good with some bacon and cheese! Isn’t this such a cute little dish? It’s a baked egg in a ramekin. Yes, I have been obsessed with cooking things in ramekins lately πŸ™‚ I had one egg left at home and a ramekin staring at me so of course I decided to cook it in there. This is a really easy recipe. For the basic ingredients, you just need egg, butter, salt & pepper. Simply butter the ramekin, add cheese & tomatoes & crack an egg on top! You can add other ingredients as you please- different cheeses, mushrooms, onions, ham. There are some recipes out there that call for heavy cream but I didn’t have any and thought it tasted fine without it. Next time, I am going to play with a variety of ingredients and add different things to each ramekin! It is always fun for me to make a frittata. It’s easy, you can get creative. and it’s a great egg dish to serve to guests. A frittata is an open face omelette that you slice like a pizza and can be served hot or room temperature. You can get creative by adding whatever ingredients you want– I usually add the ingredients I have at home already. This particular frittata has potatoes, mushrooms & bacon. Other ingredients I have used: sausage, ham, spinach, broccoli, cheddar cheese.. there are so many options! So think of some of your own favorite ingredients and try making this frittata! Why is smoked salmon so good? I get excited every time I see something with smoked salmon on the menu. One of my favorite breakfast meals is a bagel & lox platter.. you just can’t go wrong with it. I decided to create my own version and pile all the ingredients on to make a delicious open faced sandwich with smoked salmon & scrambled eggs. I know how to poach eggs now!

  This may be one of my most proudest cooking moments.. I poached eggs for the first time! And it was edible.. hooray! I love egg benedicts.. if there is one on the menu, I usually am tempted to order it. So I thought I would try making it at home sometime but I never knew how to poach eggs.. it seems terrifying but thanks to Youtube & Alton Brown, I am a pro poacher now. Watch & learn! This egg benedicts recipe I found is pretty easy. I forced my roommate & his friend to be my guinea pigs and what I learned is that they preferred to have the Canadian bacon sliced thinner. I also now know how to make hollandaise.. I feel totally legit now. And that was my homemade Easter breakfast.. homemade breakfast skillet

I’m not sure what this dish exactly is but I’ll just give it a fancy name & call it a breakfast skillet. I have a long day of work ahead so I needed a delicious breakfast to start the day right. This is an easy dish that you can make with any ingredients you have in the fridge. I basically just threw in whatever I could find into the pan. Add butter to a heated pan, throw in chopped onions, mushrooms & hash browns, salt & pepper. After sauteeing for a bit, let it be until the hash browns get crispy. Then add in chopped sausage (I just heated frozen sausage links in the microwave), add spinach & minced garlic (just a sprinkle for me) & top it off with a fried egg. Quick & yummy! πŸ™‚
