blueberry dutch pancakes

I haven’t had pancakes in such a long time and thought it would be fun to try making a Dutch pancake. If you’re wondering what a Dutch pancake is.. according to Wikipedia, it is “usually larger and much thinner than their American or Scotch pancake counterparts.” I liked making this because you don’t have to worry about flipping it and making sure it’s the perfect circle. You just mix the ingredients, pour into pan and then pop it in the oven! Crisp on the outside, soft in the inside! I wished mine curled more around the edges as I have seen in photos but I’ll try again next time and add some different ingredients. homemade huevos rancheros

Huevo Rancheros is one of my favorite dishes to order for breakfast but sometimes it is so heavy & greasy at restaurants. I wanted to try making it at home so it would be lighter & fresh. This was fun to prepare and assemble everything. And seriously, a fried egg just makes everything better. It would also be yummy to include ground beef or chorizo but I liked the freshness with just the avocado & tomatoes. I started eating it with a fork & knife but I just picked them up with my hands and devoured away 🙂 Recipe for Huevos Rancheros: Serves 4 Ingredients: 4 eggs 1 can black beans 1 avocado, sliced 1 tomato, chopped 1/2 teaspoon ground cumin 1 cup of salsa 1 cup of feta cheese 1 lime cilantro, chopped 4 corn tortillas olive oil Directions: 1. my quick & easy breakfast: oatmeal with peaches

I love breakfast but I’m so bad at eating it consistently. I’m usually rushing out of the house to get to work and don’t have time to eat anything but you can always MAKE time, especially when you can whip up something quick! Oatmeal is super quick to make and I decided to add some ingredients I already had at home: brown sugar, peaches, almonds & cinnamon. First make your oatmeal however you do (I just threw it in the microwave to save time), then stir in some brown sugar, add some sliced almonds, top with sliced peaches & finish with a sprinkle of cinnamon. It was quite delicious and I’m definitely going to make it again. baked eggs in avocado

I found a new item to cook eggs in… instead of a ramekin, an avocado! I’ve been intrigued seeing photos of baked eggs in avocados and decided to try it myself. All you do is cut an avocado in half, scoop out a little more avocado from the hole if needed to make more room for the egg. Then you crack an egg into the hole, sprinkle salt & pepper and bake in the oven. Keep an eye on it so you can determine when it’s done. I added green onions & tomatoes on top but it would also be good with some bacon and cheese! my cute little breakfast: baked egg in a ramekin!

Isn’t this such a cute little dish? It’s a baked egg in a ramekin. Yes, I have been obsessed with cooking things in ramekins lately 🙂 I had one egg left at home and a ramekin staring at me so of course I decided to cook it in there. This is a really easy recipe. For the basic ingredients, you just need egg, butter, salt & pepper. Simply butter the ramekin, add cheese & tomatoes & crack an egg on top! You can add other ingredients as you please- different cheeses, mushrooms, onions, ham. There are some recipes out there that call for heavy cream but I didn’t have any and thought it tasted fine without it. Next time, I am going to play with a variety of ingredients and add different things to each ramekin! make your own frittata

It is always fun for me to make a frittata. It’s easy, you can get creative. and it’s a great egg dish to serve to guests. A frittata is an open face omelette that you slice like a pizza and can be served hot or room temperature. You can get creative by adding whatever ingredients you want– I usually add the ingredients I have at home already. This particular frittata has potatoes, mushrooms & bacon. Other ingredients I have used: sausage, ham, spinach, broccoli, cheddar cheese.. there are so many options! So think of some of your own favorite ingredients and try making this frittata! Why is smoked salmon so good? I get excited every time I see something with smoked salmon on the menu. One of my favorite breakfast meals is a bagel & lox platter.. you just can’t go wrong with it. I decided to create my own version and pile all the ingredients on to make a delicious open faced sandwich with smoked salmon & scrambled eggs. Grab a fork & knife (it might get messy if you pick up) and enjoy! homemade breakfast skillet

I’m not sure what this dish exactly is but I’ll just give it a fancy name & call it a breakfast skillet. I have a long day of work ahead so I needed a delicious breakfast to start the day right. This is an easy dish that you can make with any ingredients you have in the fridge. I basically just threw in whatever I could find into the pan. Add butter to a heated pan, throw in chopped onions, mushrooms & hash browns, salt & pepper. After sauteeing for a bit, let it be until the hash browns get crispy. Then add in chopped sausage (I just heated frozen sausage links in the microwave), add spinach & minced garlic (just a sprinkle for me) & top it off with a fried egg. Quick & yummy! 🙂

good ol M Street Kitchen

M Street Kitchen in Santa Monica never disappoints.. it is one of my favorite brunch spots. the food is always delicious & satisfying. from the brunch menu, I have eaten the crispy hash browns benedict, the toasted egg white sandwich, the breakfast tacos & the huevos rancheros.. all yummy. I wanted to try something new this time so I got the Croque Madame: ham, sunny-side up egg, tomato, gruyere, spicy mustard. it was good but believe it or not, I think it had too much meat and I like my meat. I recommend that everyone try my go-to dish: the crispy hash browns benedict (pictured below). anyways, just go here & you won’t be disappointed… good food, good drinks, there is a bakery next door, it’s near the beach & you can walk down Main St for some shopping afterwards 🙂
