Mexican grilled corn

I have never grilled corn before but thought this recipe from Tyler Florence sounded good. It’s a great side dish for a BBQ and super easy– just make the sauce, slather it on the corn, sprinkle some other goodness and DONE, it’s like a party in your mouth! Grilled corn with all kinds of flavor.. you get a little bit of zestiness, cheesiness & creaminess all in one. I actually was too excited to eat and forgot the chili powder (oops!) but everyone still enjoyed it! I’m sure it would’ve been even better with it. πŸ˜› We decided to cut the corn into thirds so there would more for everyone.

Mexican Grilled Corn
Prep Time: 5 min
Cook Time: 20 min
Serves: 4

Ingredients
4 ears corn
1/2 cup mayonnaise
1 1/2 cups sour cream
1/4 cup freshly chopped cilantro leaves
1 cup freshly grated Parmesan
1 lime, juiced
Red chili powder, to taste
2 limes cut into wedges, for garnish

Directions
Remove the husks of the corn but leave the core attached at the end so you have something to hold onto. Grill the corn on a hot grill or cast iron griddle pan until slightly charred. Turn it so it gets cooked evenly all over. Mix the mayonnaise, sour cream and cilantro together. Grate the Parmesan in another bowl. While the corn is still warm slather with mayonnaise mix. Squeeze lime juice over the corn and shower with Parmesan. Season with chili powder and serve with extra lime wedges.
