I wasn’t sure about this dish at first since I never had butternut with pasta but it turned out pretty good and it’s easy to make. boil water in 2 pots– one for the butternut squash & one for the pasta. once the butternut is soft, blend it until it is smooth. meanwhile, sautee chopped leeks & minced garlic in butter, add the creamy butternut, sliced sage leaves & parmesan cheese. mix in the pasta and sprinkle extra cheese on top if desired. a hearty, creamy dish!

Tried this one tonight. Also super easy and light taste. I love cooking with new ingredients and I’ve never cooked with leek before (n00b cook). I’m going to make this again for a potluck I’m going to this weekend! 😉 Thanks for sharing!
Yeah I need to cook w leek more often! Might be good to add some sort of meat too!
I made it just as is for the potluck and everyone LOVED it!!! I was hoping to take the leftovers home and they all packed it for themselves!!!!!!!!!!! There was even a legitimate chef at the party and she came back for seconds!!
